Chocolate Chips Valentines Pancakes with Hot Fudge Sauce

Ingredients:

2 cups self-raising flour
1 cup cream
1 cup milk
3/4 cup dark chocolate bits (drops)
1/4 cup caster sugar
30 g unsalted butter, melted
3 egg whites
2 eggs, lightly beaten
2 tbsp cocoa powder
1 tsp bicarbonate of soda

Hot fudge sauce:
150 g good-quality dark chocolate, chopped
30 g unsalted butter
1/2 cup soft brown sugar
1/2 cup cream
2 tbsp light corn syrup

Preparing:

Sift the flour, cocoa and bicarbonate of soda.
Stir in the sugar and chocolate bits and make a well in the center.

Whisk together the milk, cream, eggs and melted butter.
Pour the mixture into the well and stir until just combined.
Cover and set aside for 15 minutes.

Beat the egg whites until soft peaks form.
Fold into the chocolate mixture.

Cook all the ingredients of the hot fudge sauce in a pan and stir over low heat until melted and smooth.

Cook the pancakes in a frying pan with melted butter or oil.
Transfer to a plate a serve with the hot fudge suace.

Coconut Pancakes with Palm Sugar Syrup

Ingredients:

185 g palm sugar, roughly chopped
2 cups shredded coconut
1/2 cup coconut cream
1 cup plain flour
1 cup coconut cream
1 egg

Preparing:
Stir the sugar with 1 1/2 cups water in a pan over low heat until sugar has dissolved, and simmer for 15 minutes.
Stir the coconut with the coconut cream and 2/3 cup of the syrup.
Return the pan with the remaining syrup and simmer for 15 more minutes.

Mix the flour, egg, coconut cream and 1/2 cup water until smooth and set aside fo 30 minutes.
Pour a little batter into a greased pan, swirling, to thinly cover the base.
Cook fo 20 seconds and trasfer to a plate.

Place 1 tbsp of shredded coconut filling in the center of each crepe.
Roll them, folding the edges to form a parcel.

Kaisersschmarren (Pancakes and Strawberries Dessert)

Ingredients:

125 g flour
2O ml milk
1 lemon rind
1 teaspoon royal
2 eggs
100 g sugar
Picks salt
50 g raisins
200 g cut strawberries
200 ml heavy cream, beaten with a little sugar

Preparation:

Mix flour, royal and grated rind of lemon.
Incorporate milk and beat.
Add the two yolks and to mix until forming a homogenous paste.

Beat the albumens on the verge of snow with a little sugar.
Incorporate to the pastry smoothly.

Form the pancakes.
Add the raisins before turning around.
Cut in small pieces.

Sweeten the strawberries.
Serve it warm with cold strawberries and cream.
