Banana and Chocolate Muffins for Easter

Ingredients:

2 cups flour
¾ cup butter, soften
2/3 cup sugar
3 ripe bananas, mashed
12 oz chocolate chips
2 tsp baking powder
1 tsp vanilla
½ tsp salt
1 egg

Preparing:

Preheat oven to 175C (350F).

Sift flour with baking powder and salt.
Cream butter with sugar.
Add mashed bananas, vanilla and egg and beat well.
Add dry ingredients on low speed.
Remove from the blender and add the chocolate chips in surrounding form.

Pour the mixture into 12 floured muffins molds.
Bake for 20 minutes.
Allow to cool for 10 minutes, unmold and serve.

Christmas Fruit Salad

Ingredients:

1 cup heavy cream
1 cup sliced strawberries
¼ cup water
3 oranges, peeled and cut into wedges
2 ripe bananas, peeled and sliced
1 jar of cherries in syrup
½ pineapple, peeled and diced
2 tbsp lemon gelatin
1 tbsp butter
1 tbsp oil

Preparing:

Whip the heavy cream to make whipped cream.

Cook until browned on both sides the banana slices in a skillet with oil and butter.
Place the bananas in a bowl and add the strawberries, oranges, cherries and pineapple.

Dissolve gelatin in water and mix well with the fruit.
Add the whipped cream in surrounding form and serve.

Fruit Kebabs with Honey Cardamom Syrup

Ingredients:

16 strawberries
1 peach, cut into small pieces
1 banana, sliced
1/4 small pineapple, cut into small pieces

Honey Cardamom Syrup:
20 g unsalted butter, melted
2 tbsp honey
1 tbsp rum or brandy
1 tbsp brown sugar
1/2 tsp ground cardamom

Preparing:

Soak 8 wooden skewers in cold water for 20 minutes.
Thread the fruit alternately on skewers and place in a shallow dish.

Combine the honey with butter, cardamom, rum and sugar.
Pour the mixture over the kebabs, cover and set aside for 1hour.

Preheat the griller.
Cook the kebabs for 5 minutes.
Brush with syrup occasionally.
